Inside its bright pink walls, a family-run restaurant in Concord serves traditional Mexican cuisine with a modern twist, accompanied by margaritas galore.
Birritaco offers a wide range of birria-inspired entrees and vegan and vegetarian options, along with an open kitchen, inviting you in.
Among the building’s other design features are its paintings, inspired by La Catrina’s Day of the Dead, and its walls displaying drawings and signatures from previous customers.
Marco Ruiz co-owns Birritaco with his mother, Marie Curiel. Ruiz, originally from the Mexico City area, moved to China Grove when he was just 10. After eight years in North Carolina, Ruiz moved to Cleveland, Ohio, where he worked at Barroco, owned by the Vergara family, and picked up a knack for the restaurant business and management.
After working in Cleveland, he decided to bring something like Barraco’s vibe to Concord.
“That’s kind of where my love for the restaurant business grew. Or, actually, I discovered it. So I already knew I wanted a business. And then working for this restaurant – that’s where I knew I wanted a restaurant, which is actually what this idea kind of came from,” Ruiz said.
Previously, Ruiz’s family had occupied Birritaco’s space with his uncle’s supermarket and his mother’s restaurant, both called Lupita’s. After the supermarket moved and the restaurant closed, Ruiz started to build Birritaco with the help of the Vergaras.
“Basically, we kind of renewed it in a way, but we did change the style quite a bit. It was more traditional-style food. And now this — even though it is traditional recipes, it is more of a modern style of food,” Ruiz said.
Food — Here are a few of Birritaco’s menu staples:
“So these are still Mexican, recipes are very traditional. The seasonings, the way we cook it, all that kind of stuff. All the prepping is still done the same way. A lot of recipes are from my mom that she gave to me to implement them in the business. But the way we present, the way we plate it, the way we mix things, that’s where the more modern style comes in,” Ruiz said.
The taco spot, which prides itself on fresh items, also goes the extra mile to have someone come in just to make their tortillas by hand.
“I think that’s one of the things that makes us very successful, and people can tell that we can make our tortillas and it does make a difference,” Ruiz said.
Drinks — Birritaco’s bar, separate from its main dining area, is home to 21 margarita flavors and 150 tequilas. Ruiz says Birritaco’s two most popular margarita flavors are blood orange and spicy mango.
The restaurant also has margarita flights with four flavors in short glasses if you’re indecisive like me or just want to try out something new. Flights are $16 with the house tequila, or if you come in on a Monday, you can grab them for $10.

Vibe — think Barbie pink.The bright pink paint, while both timely and eye-catching, was an idea from the Vergara family, who advised Ruiz to paint the building in a bright color. “Because where have you seen a pink building before or pink Mexican building before?”
“I was like, yeah, I haven’t. I was like, it’s gonna draw attention. It’s gonna catch people’s eye. It’s a pretty color,” Ruiz said.
On the inside, you’ll get “two kinds of vibes.” There’s the family-oriented yet laid back ambience in the dining area, and on the other side, there’s the bar area, which is where you’d go to hang out, bring a date or chat with friends.
With the walls inundated with pink and paintings sprawled across its interior, Birritaco previously invited customers to leave their marks on the walls. But the restaurant has since stopped due to a few less than tasteful drawings from visitors.
“I wanted people to leave a mark as part of the business, I wanted to include them, I wanted to be part of it,” Ruiz said.
Nonetheless, you’ll feel the undeniable family run nature of it all, as the business began with the strong support of family back in August 2021 and has continued with help from both friends and kin ever since.

CONCORD, N.C. — The only free community medical clinic in Cabarrus County has gotten a boost in funding. Lowe's is giving the clinic an $80,000 grant for necessary facility improvements. However, the assistance of one donor, volunteer and contractor, James Gerber, has allowed the clinic to see even further updates from patient-accessible changing doors to new windows.
Gerber, a part-time nurse and retired New York firefighter isn’t originally from North Carolina. He moved to the Tar Heel state to be closer to family and learned quickly that every community is in need of extra help.
“I grew up with a single mother raising twin sons, and I saw how much she struggled, and one of the things she actually did was she flipped homes to put us in a house,” Gerber said.
He credits his upbringing, and 20 years in the fire service, for his willingness to give back.
“It really was amazing that you could do so much for people in their most critical moment of need and be that person that really helps out. And that’s kind of what I’m doing here,” Gerber said.
He said when he realized the condition of the Community Free Clinic, which was built in the '70s, there was no question that between his handyman skills and access to volunteers, he was going to be a part of the facility's transformation.
“When we came into these rooms, they had a lot of stuff that wasn’t necessary or even relevant anymore. One of the things is they had x-ray boxes that were in here,” Gerber said.
The Community Free Clinic in Concord applied and was granted $80,000 from Lowe's in June. Gerber said he thought the facility needed more money for all the work that is done for people in need. That’s when he started a capital campaign in hopes of raising $100,000 for the Community Free Clinic.
“I understand that like they need some paint here, and that’s something that's important, but really what they need is you know, funding to be open five days a week. They need funding to replace some of the equipment through all this construction work that they’re doing here,” Gerber said.
Among Gerber, including volunteers from firefighters from Concord Station #2, a group from F3 Fitness Afton Ridge and the Hough High School Lacrosse team. Gerber said he began putting out the word to help raise more money and tells Spectrum New 1 that he's determined to keep showing up at the clinic until it becomes a place patients and workers can be proud of.
“One way or another, that’s what firemen do. They see a problem, and they fix it. Doesn’t matter how long it takes, doesn’t matter what they need to do. We’re going to be here till the end,” Gerber said.

CONCORD, N.C. — A well-known historic home renovator is working to save a Concord home.
The home is on Union Street South, just outside downtown Concord, and sits on land that a developer bought. But instead of just tearing it down, a man and his father have plans to save it.
″I remember just thinking how sad it was that it was going to be torn down,” Adam Miller said. “I’ve probably gotten 100 and something emails and messages of other people saying we wanted to save it.”
Adam Miller, better known by his nearly 2 million TikTok followers as “Old House Adam,” stepped in to save the home and restore it to its former glory. It’s what he and his wife are known for.
“It’s a great home with great character; it’s worth saving,” Miller said. “And that’s always our goal, because they’re never going to build this house again.”
One of the most unique aspects about this renovation is that the house, instead of staying on the property, is being cut into pieces. It’ll get moved about 5 miles away to its new permanent home.
“I mean -- you’ve got to be out of your mind to do this. But we’re out of our mind,” said Dr. Joe Lockavitch.
Joe Lockavitch and his wife, Angela, are Miller’s in-laws and will live in the home on their property.
“The vast majority of the people in this community did not want that house torn down,” Joe said. “So the fact now that it is saved -- now won’t be on this land, but it will be beautiful. And it is still in Cabarrus County. And it will be given the new life that it should have.”
The project is getting the attention of many community members. All day, they stopped to ask Miller what was going on because this isn’t the first time he has split a house apart to save it.
“We’ve got it to almost to a science,” Miller said.
The last house they saved was split in two and will move to its new location in just a few weeks. The same thing will happen to their current project; the top of the home will be cut off and all three parts will be transported.
It is Miller’s mission to keep the charm and history of the area alive any way he can.
“Anytime they see our sign, it means the house is safe. And even if it’s not safe -- where it’s at -- we’re going to keep saving these homes, and we’ve got really big projects, really big plans,” Miller said.

CONCORD, N.C. — A local nonprofit plans to convert an old manufacturing plant in Concord into transitional housing.
On Wednesday, the Cooperative Christian Ministry announced it bought the Brown Mill property on Cabarrus Avenue. It’s a 10.5-acre plot of land with four buildings totaling about 220,000 square feet.
The plant was built in the early 1900s and was called Brown Manufacturing Company. Eventually, it became part of Cannon Mills Plant 10 and created textile products.
The Cooperative Christian Ministry wants to convert the land and buildings into what they’ve dubbed “The Rebuilders Campus at Brown Mill Commons.” The nonprofit, in partnership with the community, wants to meet the need for transitional housing in Cabarrus County.
CCM also wants to create a stable source of housing for those in a housing crisis, as well as “nutritional support and access to resources to promote housing stability.”
Two apartment buildings will be built for now; the nonprofit plans to have four eventually. The Rebuilders Campus will also have a program and activity center that would include daycare facilities for 48 families living there.
“The campus will serve single and two-parent families with children, senior adults and working age adults in employment transition with stable housing, plus nutrition, health, academic, and employment supports just steps away from clients’ single-family apartments,” a news release from CCM reads.
In addition, residents will have case managers who can mentor them on responsibility and autonomy.
“Cabarrus County is experiencing a housing crisis that is rapidly escalating into a homelessness crisis. Senior adults and families with children are finding themselves without options for safe and stable housing,” a statement from Ed Hosack, CCM’s Chief Executive Officer, reads. “The Rebuilders Campus is the first of two major initiatives where CCM is partnering with County and City leaders and engaging the community to help these households restore dignity, family finances and housing stability.”
