Brian Reeder and his business partners were in survival mode as they worked to keep Vessel Kitchen open during the peak of the coronavirus pandemic. While figuring out how to keep employees paid and navigating curbside pickups, the fast-casual restaurant was also bidding for a spot in the Salt Lake City International Airport.

A few months had gone by since Vessel Kitchen had its final presentation and Reeder sent off an email to their partner, travel retailer Paradies Lagardère, in hopes that there had been a decision. “No, but any day now!” a team member responded.

Reeder received a call a few hours later with the news: Vessel Kitchen would open a new location as part of the Concourse A expansion, which wrapped up in late October. It marked the seventh location in seven years of business.

“It was kind of surreal,” Reeder said. “The airport location was validation for all of this [hard work].”

Construction brought 11 new dining options to famished and thirsty travelers with the airport taking a particular interest in small businesses, including Hugo Coffee Roasters. It will be the brand’s second coffee shop and first storefront location.

Hugo Coffee Roasters, like its neighbor across the street, weathered the pandemic even as dozens of other small businesses closed. CEO Claudia McMullin had felt a lingering gloominess as the community recovered. Now she feels as if the clouds have started to dissipate and a new beginning is on the horizon.

“It means everything. These have been very difficult years,” she said.

The two Park City-based businesses were able to beat out dozens of competitors for a spot with an international reach not only because of their locality but also because of their missions and commitment to quality. Salt Lake City is the 21st busiest airport in North America and the 70th busiest in the world when it comes to passenger numbers, according to its website. More than 26 million passengers were served in 2019.

For small ski town businesses like Vessel Kitchen and Hugo Coffee Roasters, that can be transformative.

A thoughtful approach

Vessel Kitchen’s first location in Kimball Junction had only been open for four months when Reeder and co-owners Nick Gradinger and Roe’e Levy tried to make it into the first phase of the airport expansion. The team was a bit bummed to be passed over in 2016, but they didn’t know the opportunity to bid again would come around about four years later, when they had a few more restaurants and more experience.

Opening lucky number seven was a two-and-a-half-year effort for Vessel Kitchen and its partners at Paradies. The team spent hours on calls working on a presentation to differentiate the fast-casual restaurant rooted in health and affordability. The eatery’s quick, easy and nutritious meal offerings checked all the boxes, and Vessel Kitchen finally opened on Oct. 6.

Reeder said the airport location was different from other projects because the team had less involvement. They assisted with the design and primarily helped with the operations side, such as training. Hiring proved to be somewhat difficult, as there’s a high barrier to working at the airport. However, these employees tend to be high-caliber and have less turnover.

There were also challenges with equipment because of the airport regulations. Vessel Kitchen had to switch to a self-ventilating oven rather than one with a hood. Fryers were prohibited, too.

Yet this led to unique opportunities for the team to try something new. They reworked the recipes of the scratch-made falafel and pita strips, and they’re considering implementing the baked version at all of their locations because of how it’s improved. The new location will also have steak and breakfast for the first time. Since adding it to the airport menu, Reeder said they’re exploring adding the morning meal to some or all locations.

While many people associate airports with expensive, inconsistent food, Reeder affirmed that won’t be the case for Vessel Kitchen.

The restaurant uses a central kitchen in Sandy where everything from the miso dressing to the macaroni and cheese is prepared and delivered six days a week to each Vessel Kitchen. This helps ensure there is consistency and efficiency at every location while balancing quality. There’s also an airport policy prohibiting businesses from price gouging travelers.

It also speeds up the process and keeps costs down. Chopping sweet potatoes could be a full-time job in the kitchen, but an industrial chopper can shred the root vegetables like a wood chipper in just a few seconds. Ingredients can also be purchased in bulk for one site rather than several.

Vessel Kitchen has experienced great exposure since opening in the airport with requests for the eatery to expand out of state. But Reeder seems to have his sights still set on Utah. The restaurant is on track to open its next site somewhere in Heber City, Riverton or Utah County in early 2024, with an additional goal of opening its ninth location next year, too. There are around 20 sites on their radar, including southern Utah.

Reeder said they’re also hoping to bring back beer and wine as well as roll out more seasonal and specialty items in 2024. The co-owners might even release a podcast analyzing behind-the-scenes restaurant decisions such as the practicality of paper straws and the endless varieties of take-out containers.

“We miss as often as we get it right, but we’re not afraid to change. We’re not afraid to … evolve and adapt,” he said.

Taking off in a new direction

For Hugo Coffee Roasters CEO Claudia McMullin, another location was never in her business plan.

She was recruited by Connect Hospitality and Master ConcessionAir in the fall of 2021 because of her eligibility for the Airport Disadvantaged Business Enterprise Program as a woman-owned business. The Salt Lake airport strives to increase opportunities for entrepreneurs who are socially or economically disadvantaged such as minority populations and people with disabilities, and wants to maintain a certain percentage of those businesses. McMullin applied for the certification and qualified. She learned Hugo Coffee Roasters was awarded its own space early last year.

The second coffee shop location will be a bit more limited in its offerings because of the high volume of customers at the airport. Customers can expect the same delicious coffee drinks they’ve come to love from the kiosk in the Park City Visitor Information Center. However, there won’t be the same made-to-order food options.

Instead, there will be grab-and-go options including a second local women-owned business, Park City Granola, as well as baked goods. Hugo coffee beans will also be used at the newly opened Rockwell Ice Cream, which has locations in Provo and Salt Lake City, as well as P.F. Changs.

The new location provides a huge opportunity to increase brand awareness and further the mission to save animals, McMullin said. Sales on the second day of business already exceeded the first, and people were excited to learn about Hugo and its mission. With every new customer, that’s additional people directed to the website with more money donated to cash-strapped rescue organizations across the country.

McMullin hopes to grow Hugo Coffee Roasters into a nationwide presence and its success in Concourse A will be critical to realizing that dream. She said she’s already started looking into becoming a concessionaire at other airports in the area and may consider franchising the coffee shop. McMullin is also planning to redesign her packaging to be more sustainable and may consider launching canned cold brew products.

And now she feels like she’s finally heading in the right direction.

“I see for the first time in three years that I am excited about the future, and I’m excited about the growth of Hugo coffee. I know we’re not only going to survive as a company, but we’re also going to thrive and save a ton more animals,” she said. “It gives me chills, frankly.”

It’s easy to see why Zion National Park in Utah receives millions of visitors each year. With its pink and red sandstone cliffs, fantastic hikes, hanging gardens, canyons, and stunning natural waterfalls, it’s a must-see national park. However, what’s the best way to get there if you don’t live within driving distance? Let’s take a look at the four best airports for getting to Zion National Park.

1: St. George Regional Airport (SGU) – St. George, UT

The closest airport to Zion National Park is the St. George Regional Airport (SGU). However, it may not be the best option. Although it’s nearby, (about 50 miles away) it’s not a major airport. Consequently, tickets will likely cost more, there are no international flights, and most domestic travelers will need connecting flights.

Three airlines service the airport: Delta, United, and American Airlines. The cities that fly directly there include Dallas, Phoenix, Salt Lake City, and Denver. However, there aren’t many flights per day, and times are limited.

If you do fly into St. George, you can rent a car (there are several options inside the airport for car rentals) and drive to Springdale, UT, which is located immediately outside the boundary of the park. The other option is taking a shuttle from the airport into Springdale.

2: Cedar City Regional Airport (CDC) – Cedar City, UT

Another small nearby airport is the Cedar City Regional Airport (CDC). It’s located about 60 miles from the Springdale entrance to Zion National Park. However, Cedar City has even fewer flight options than St. George. Delta is the only commercial airline to fly into the city. The only flight available comes from Salt Lake City.

If you do decide to fly into Cedar City, there are rental car companies located within the airport. You can rent a car and take the drive to Springdale.

3: Harry Reid International Airport (LAS) – Las Vegas, NV

Although there are conveniences to small airports, for most people, flying into a major, international airport with many flight options and cheaper airlines is probably the best bet. The Harry Reid International Airport in Las Vegas, Nevada, is about 170 miles from Zion National Park. Although it’s too far for a shuttle, there are plenty of rental car options available. The drive from Las Vegas to the park entrance takes about two and a half hours. This makes the LAS airport our top pick for convenience and price for the majority of travelers.

Although more crowded airports may mean longer security lines and traffic, there are some benefits to flying into a large airport such as Las Vegas. There is plenty to do while you wait for your flight, such as dining at a variety of restaurants and shopping. If you’ve got more time or your outgoing flight is very late, you can get in a workout or take a nap in a sleeping room at ZEROLevel Fitness located in Terminal 1. And finally, LAS even offers gambling areas throughout and a smoking lounge.

Yes, the Mccarran Airport is the former name of LAS. In 2021, the McCarran Airport was renamed to the Harry Reid International Airport, although its FAA code (LAS) stayed the same.

4: Salt Lake City International Airport (SLC) – Salt Lake City, UT

Finally, our last option is the Salt Lake City International Airport. Although it’s a further drive to Zion National Airport from Las Vegas, it’s still a good option for getting to the park. It’s about a four to five-hour drive to Springdale.

However, Salt Lake City is known as the gateway to five of America’s greatest national parks: Bryce Canyon, Capital Reef, Arches, Canyonlands, and Zion. So, if you’d like to hit up some other attractions in addition to Zion, Salt Lake City makes a great starting point. It’s also considered one of the most “scenic airports” in the U.S. with its built-in art pieces and unique architecture. But if you’re looking to fly in and go directly to Zion, Las Vegas is likely your most convenient and cheapest option.

There is a range of options for people headed between Park City and Salt Lake City International Airport.

Personal vehicles, rental cars, a variety of taxi and shuttle companies and rideshare firms seem to be the most popular. Someone can also catch their flight via bus from the Park City area to a TRAX line that serves the airport.

As Park City leaders consider a set of transportation concepts that have collectively been labeled emerging disruptors — named for their potential to radically change the way someone is able to move about — one of them could especially draw interest from Parkites who regularly fly in and out of Salt Lake City as well as visitors who use the airport.

A connection to the airport was one in a series of concepts that was presented to Mayor Nann Worel and the Park City Council this week. The elected officials were not scheduled to make decisions about any of the concepts, and they did not spend extensive time on any of them. The mayor and City Council are expected to return to the discussions about the concepts later in the year.

A consultant drafted a paper about an airport connection that was distributed to the elected officials prior to the meeting, covering some of the issues related to a service and raising certain questions. The questions included what entity could offer a service, such as airlines, hotels or transit systems, and whether there is a role in a connection for the mountain resorts.

The paper says an analysis in 2018 identified the potential of bus service linking the airport and Summit County, possibly with stops at the transit center at Kimball Junction and the Old Town transit center. That service was not pursued, but the study included estimates for operating costs that reached up to $5.7 million for 300 days of service in a year.

The paper also mentions the idea of an urban air mobility service — helicopters or flying machines of the future — someday linking Park City and the airport. Services like those “would require infrastructure at both ends of the journey such as a vertiport (helipad), passenger facilities, and connectivity to the local transportation system,” the paper says.

Various segments of the local business community, as well as fliers, would be expected to closely follow any prospects of some sort of connection between Park City and the Salt Lake City airport.

The Park City-area transportation industry would likely be intensely interested in the details of any airport connection. Firms that serve the airport could have concerns about competition from a connection. It is something that could increase tensions between government officials and taxi and shuttle firms as a service is debated, particularly if a service is offered at a substantially lower cost than those charged by the transportation industry.

The tourism industry could see a connection as providing a potential boost since there would be another way to reach Park City from the airport.

Fliers from the Park City area, meanwhile, could be intrigued by an airport option that eliminates the need to leave a personal vehicle at the airport for an extended period.

The proximity of the international airport, and the large presence of Delta Air Lines there, have long been seen as competitive advantages for Park City over the more remote mountain resorts in North America that are served by regional airports. The airport is also seen as a crucial cog in the broader economy of northern Utah.

Alberta’s alpine lakes are superior. It’s controversial, I know, but Colorado can’t be the best at everything. And it’s good to get out of the state sometimes, even if you’re staying within the Rocky Mountains.

Don’t get me wrong; I’ve seen and admired many of Colorado’s lakes, but may I propose Banff National Park in Canada for your next alpine lake adventure?

The trek to the northern section of the Rockies is just a two-hour flight from Denver to Calgary International Airport, followed by a 90-minute drive into the park.

From the first sign, you’ll be blown away by the views. The mountains have rock faces at a scale you just don’t see in Colorado. And every lake is a different hue of vibrant blue or green.

Plus, who doesn’t love a hike-in-only teahouse? The area has a few of these historic cafes, which were the inspiration for this trip. There is truly nothing like drinking a piping cup of peach apricot white tea on a drizzly August day overlooking Lake Agnes. Add that to your bucket list!

I spent a week exploring with my friend in Banff and Lake Louise and we only saw a portion of this beautiful park. But I’ll share my highlights with you so you can plan to experience the wonder of the Canadian Rockies yourself.

Logistics

Passport: Duh.

Parks day passes:

Book in advance: We booked our August campsite reservation back in March when they opened up — it was a frenzied experience that avid Colorado campers will know all too well.

Getting around: I’d suggest renting a car for pure convenience. Although the buses are highly encouraged by the Parks Canada staff, they are not the most reliable and don’t drop off near most of the trailheads. If you do plan to use the bus, download the Token Transit app before your visit to make buying passes easier.

Calgary to Banff: I’d highly recommend the bus service Brewster Express if you’re looking for an easy way to get from Calgary International Airport into the park or vice versa. They are efficient and operate by reservation only. My round trip from Calgary to Banff, then Lake Louise to Calgary, cost around $200.

How to pack for an international camping trip

I flew with two packs, one 65L with all my “big” gear (tent, sleeping gear, hammock) and the second, a 40L pack that had my day-one essentials in it that would work as my carry-on and day pack.

What to know about flying with gear:

— Fuel canisters and bear spray aren’t allowed in planes so you have to purchase those after you land. We paid it forward on our way out of the park by passing leftovers over to other campers.

— Hiking poles must go into your checked bag as do any utility knives, according to TSA.

— My JetBoil stove went in my checked bag on the way there and came back in my carry-on; both were TSA-acceptable.

Camping

Lake Louise Campground

This is a beautiful and well-maintained campground with drinking water, food storage, bathrooms and showers (with hot water, even). The tent camping area is protected by an electric fence to keep bears and other animals away. The firewood is free. The only downside is that despite the name, there is no lake access to Lake Louise from the campsite.

Two Jack Main Campground

This is a huge campsite right outside the town of Banff. It has its own Roam bus stop and is just a short walk from Two Jack Lake. There are no showers but there is drinking water, flushing toilets, sinks for dishwashing, bear boxes and free firewood.

If you’re leaving the campsite by bus, it’s free to use Roam Transit but you’ll have to pay on your way back.

Hikes

C-Level Cirque

Get ready for an incline! This one is steep but the views are worth it. You’ll hike a part of Banff’s history when passing by old mining shafts along Cascade Mountain. Tip: When you come across the first mining building ruins, take the smaller trail offshoot behind the building for a view back toward Lake Minnewanka.

Plain of Six Glaciers — Big Beehive — Lake Agnes Tea House

If you only do one long hike, do this one. You seriously cannot beat it. You’ll see three alpine lakes (Lake Louise, Mirror Lake and Lake Agnes), visit two historic, hike-in-only teahouses, and hike to the glacier that feeds Lake Louise. You’ll do a steep incline with switchbacks to start, and spot a waterfall before stopping at the Lake Agnes Tea House for a pick-me-up. Continue around Lake Agnes, where you’ll summit the Big Beehive, and then turn back around to hike downhill in the forest, where you’ll follow a river toward the glacier and second teahouse. Then, it’s downhill until you wind up on the backside of Lake Louise to finish off the loop. There are many ways to make this trail shorter but I’d highly recommend the full loop as well as stopping at the teahouses for a steaming cup of tea, a sandwich or a bowl of soup.

Sulphur Mountain Trail

You could take the eight-minute gondola to the top of Sulphur Mountain or you could spend two glorious hours sweating your way up the switchback climb. Either way, the top will service gorgeous views, as do many of the lookouts along the trail. Got tired on the climb? You can take the gondola back down or test your knees’ endurance on the descent. The best part? The trailhead is also the parking lot for the Banff Upper Hot Springs (see below).

Other things to do

Sunrise bus ride to Moraine Lake

This is a must-do activity. Roll out of your sleeping bag at the crack of dawn to catch the 4 a.m. bus from Lake Louise Village up to Moraine Lake. Cars are no longer allowed up to the lake due to popularity so you have to book a shuttle anyway; might as well make it for sunrise! You’ll hike up to the rockpile in the dark and the sun will rise behind you and illuminate the lake and its vibrant aqua water. If you have clear skies, you’ll be able to see the nine peaks that surround the lake, too.

Pro tip: Bring along your camp stove (shoutout to JetBoil) so you can make coffee while you wait in the cold.

Via ferrata at Mount Norquay

If you want a break from the hiking, try tackling a via ferrata. It is a protected climbing route where you’re using steel cables, rungs and ladders to climb. No climbing skills are required and this activity is available to people over 12. The views are incredible. If you’re not already a climber, this may be your chance to hang off a rocky cliff without risking a fall. The views were spectacular and the guides are awesome.

Banff Upper Hot Springs

A first-come, first-serve mineral hot spring that looks out over Banff. The single pool is hot and is a great option for muscle recovery if you have been hiking a lot like we were.

Banff Ave Brewing Co.

There are some things that just taste better after a long day on the trail. A giant bowl of french fries and a White Wit (5% ABV) from this local brewery really hit the spot for us.
