Julie Schiess, a water safety swimming instructor, took hold of 17-month-old Max Manna above the water. He was fine before in the arms of his mother until Schiess held him. Then he began crying.
“This is very common,” she said. “I don’t take it personally, because I know I’m giving them something important.”
Schiess gently dunked baby Max under the water near the side of the pool and let go. He wriggled and doggy paddled under the water until his little arms reached up to the edge of the pool. He then pulled himself up above the surface and took a deep breath. And cried a bit again.
Through infant swimming classes, Schiess aims to create a level of protection against child drowning deaths in pools.
“Between the ages 1 and 4, drowning is the leading cause of death,” Schiess said. “A child under the age of 4 is 14 times more likely to die in a pool than in a car accident.”
Her method of teaching is what she calls a sensory-motor system. It’s based on the teachings of the Infant Swimming Resource program she’s been certified through for more than 12 years.
This method means that she can help a child associate the feel of water on their face with a set of motions. If a child feels immersed face first in water, the automatic response should be to turn over and do a survival float, face up and out the water, Schiess said.
Infants from 6 to 18 months old are taught to remain in the position until someone picks them up out of the water.
“This is not like traditional swim lessons,” Shiess said. “It’s a drowning prevention program that teaches survival swimming.”
Children 18 months and older are taught a swimming sequence with their faces in the water.
During one demonstration with a 3-year-old, Schiess had the girl swim to her from the wall of the pool. She kicked and swam forward face down in the water and then turned over onto her back to get air. Then the girl flipped over and continued swimming.
A son who flourished in water
Schiess had a unique entry into the world of infant swimming instruction.
She was an avid swimmer from Florida raising a 3-year-old and a 1-year-old son in Miami. She hoped to take her children with her when she went swimming, and put her one year old in floaties to keep him safe.
Quickly, Schiess learned that it would not work. Her son wasn’t able to keep his head up, because of medical challenges she found two years later were caused by Mitochondrial and Metabolic Disorder.
She would soon move to Orlando, where behavioral psychologist Harvey Barnett offered swim lessons through what was called Infant Swimming Resource.
“I saw one of the commercials for this program, and said, ‘Holy cow, I need this for my child.’ When I looked into it, I thought the cost was too high,” Schiess said.
Eventually, she went to see if she could take her son to the class anyway. Because of all his health issues he had to be evaluated by Barnett directly, who recommended him to a special needs medical-based class.
He was taught similar safety skills as the regular infant swim classes, such as how to float, and flip over to breathe but with a therapy aspect to it. Schiess was amazed with the progress that her son made in the class, in not only swimming but in other areas of his life.
“It was 100 percent the reason why he started speaking and walking. The therapy environment of the class was really beneficial for him,” Schiess said.
During this time, she began the process to become an infant swim instructor herself, after seeing the safety benefits of giving swimming skills to infants.
She did not study the medical side of the infant swimming resource method that her son had benefitted from, however she wished to share with other parents ways to prevent water accidents with their own young children.
Schiess received her certification with Infant Swimming Resource in 2001 and continued teaching after she moved to California that year.
She lives in Lodi with her husband, Troy Schiess, an engineer for a local firm. They have six children whose ages range from 6 to 16.
Schiess offers lessons at private residential pools and has also offered them through the pools operated by Twin Arbors health clubs in Lodi.
Creating ‘aquatic problem solvers’
In her time teaching, she said she has had many parents come to her worried about the safety of their children around pools.
Others wish to teach their children how to swim because as parents they don’t know how to swim, and want better for their children.
Schiess has even had several parents come back to her detailing actual pool accidents that happened after taking her class.
Jessica Pless, for example, was concerned with her parents’ unfenced pool.
“I had a friend recently in LA who had a kid who drowned and that motivated us to get him to swim,” Pless said of her 2-year-old son, Jack. “A few months after the class he fell into the pool and did his floats.”
Pless said that despite the cries he gives during swim lessons, her son loves being in the water.
Despite what seems like a strange idea, in getting infants to float and swim in the water, many have seen the benefits of this method of teaching.
“It makes them become aquatic problem solvers. They can survive an aquatic accident and will do it stress free. They won’t be fearful because they have the skill to solve the problem,” Schiess said.
“They may be taken by surprise and cry from falling in the water, but they will survive.”

Authorities say former New England Patriots quarterback Ryan Mallett is dead following an apparent drowning at a Florida beach along the Gulf of Mexico. He was 35 years old.
The Okaloosa County Sheriff's Office said first responders were called to the beach behind 775 Gulf Shore Dr. in Destin shortly after 2:10 p.m. Tuesday.
A group of people in the water near the second sandbar had reportedly been struggling to make their way back to shore, according to the sheriff's office. One of the individuals, a tourist later identified as Mallett, went under the water, and lifeguards said he was not breathing when he was pulled out.
The sheriff's office said lifesaving measures were immediately undertaken, but Mallett was pronounced dead at the Destin Emergency Room.
"We send our heartfelt sympathies to his family, friends and loved ones in his tragic passing," the Okaloosa County Sheriff's Office said in a statement.
"The New England Patriots are deeply saddened to learn of the sudden and unexpected passing of former quarterback Ryan Mallett," the team tweeted Tuesday night. "Our thoughts are with the Mallet family, his former teammates and all who are mourning his loss."

Little-known Massachusetts law causing major consequences for some homeowners
Former New England Patriots quarterback shared a photo of Mallett on Instagram saying, "We lost a great man. Thank you for everything Ryan."
Mallet was selected 74th overall by the Patriots in the third round of the 2011 NFL draft. He was New England's highest-drafted quarterback since 1993 until the Pats took Jimmy Garoppolo in the second round in 2014.
The University of Arkansas product spent three seasons with the Patriots as Tom Brady's backup, appearing in four games with New England in 2012.
"I am extremely saddened by Ryan's tragic passing," Patriots head coach Bill Belichick said in a statement. "My thoughts and prayers are with his family and the many people whose lives he touched."

Mallett was born on June 5, 1988, in Batesville, Arkansas, and was a five-star recruit out of Texas High School in Texarkana, Texas. He played his freshman season at the University of Michigan before transferring to Arkansas, where he passed for 7,493 yards and 62 touchdowns in two seasons with the Razorbacks.

Mallett was entering his second season as head coach of the White Hall High School football team in White Hall, Arkansas. He was an assistant football coach at Mountain Home High School in Mountain Home, Arkansas, during the 2020 and 2021 seasons.
"It is with great sadness that we share the loss of Coach Ryan Mallett. Coach Mallett was a beloved coach and educator," reads a statement from the White Hall School District posted on Facebook. "We ask that you remember his family, team, students, fellow coaches, and the White Hall School District staff in your prayers."
Mallett played in 21 NFL games, completing 55.1% of his passes for 1,835 yards with nine touchdowns and 10 interceptions in his career. He played for the Patriots (2011-13), Houston Texans (2014-15) and Baltimore Ravens (2015-17).

The party-supplies retailer said it planned to close 22 stores in February, according to documents filed in bankruptcy court in February.
In April, the retailer announced that it would close another nine stores in California, Indiana, New York, Ohio, Oklahoma, and Michigan. Four more stores – in California, Texas, and Massachusetts – have now joined the list, A&G Real Estate Partners, the real-estate advisor auctioning the stores, announced Tuesday.
Party City had already closed and vacated 28 stores in 13 states prior to filing for Chapter 11 bankruptcy protection on January 18, and it is now asking the court to release it from those leases, Retail Dive reported. The chain operated 823 retail locations, 770 of which were company-owned, according to court documents filed in January.
The retailer has struggled since the onset of the coronavirus pandemic. Sales lagged during lockdowns, and supply-chain disruptions in the years since have hampered inventory levels and helium has been in short supply, Reuters reported.

“I had one young man come to me – he’s a Type 1 diabetic – and say he hasn’t had bread for 12, 13 years. He tried it and he came back 90 minutes later saying the pump didn’t pump any insulin,” Kovacs says.
Lounging on a high top chair at the counter of Orlando’s Bakery, Kovacs has a passion for his bread. He’s eager to talk, spread the word, like a man sitting on a socially-conscious goldmine.
He says the bread has a small but dedicated following. He doesn’t yet sell 1,000 loaves a week, but those who know come back, he says, even when the product is sold out – once, twice, three times – to get their hands on a loaf. His speaks with a cadence that's somehow both even and urgent when describing product.
The topic is weighty and scientifically complicated, but when it comes to bread, he’s ready to talk.
Kovacs started developing his bread in 2012, when he heard about a diabetic-friendly flour being developed in Europe. He bought the patent and brought it to the U.S., and in 2016 began producing it large-scale. He also has been working with Ingredion, a starch manufacturer, which makes a high amylose resistant corn starch perfect for his purposes. The advanced flour and corn starch are two of the mechanisms he uses to make sure the bread won't cause a spike in blood sugar.

A resistant starch is not fully broken down and absorbed, which is what gives it its name – it resists digestion.
So, the high amylose resistant starch is comparatively good for people wanting to maintain steady blood sugar levels, though that’s not the only feather in the health-conscious cap of this bread.
Ready for more jargon? Resistant starches typically fall into one of four categories: RS1 through RS4. To be considered RS1 or RS2 starches, no chemical modification can take place – only physical (grinding, pounding, etc.). Kovacs uses only RS2 starches in his bread, so they haven’t been chemically modified. According to Kovacs, many other low-carb bread manufacturers use RS4 starches, making them chemically modified and, therefore, less natural.
“That’s why we feel we are in a league of our own, and that the product is truly revolutionary in the marketplace right now,” he says after slugging through a few minutes of technical talk.
But a healthy starch does not good bread make, and Kovacs needed to turn healthy into tasty – a task he didn’t take lightly. According to Kovacs, diets that emphasize losing weight by cutting carbs, like the Atkins Diet, fail because carb substitutes frankly don’t taste good.
“The European standpoint is, there are many, many low carb/zero carb products, but in the food business, taste is king,” Kovacs says.
His point is – you can find no-carb bread out there, but it won’t taste as good as his, which comes in two varieties: traditional and whole grain. He knows the flavor is good because most of his taste tests were done by the harshest critics of all – kids.
“We wanted to get an unfiltered, honest opinion about the product,” he says. “Actually, juvenile diabetes is exploding in this country. I think offering tasty alternatives for children is perhaps even more important than for adults.”
So why has no one else tried the methods he has to achieve healthy, delicious bread?
“In the bakery business, innovation happens on a very small mom and pop level – the Orlando’s level,” Kovacs asserts. Big box manufacturers are looking for sure bets, he says, and aren’t willing to sink a million dollars into a project like this.
Currently, his bread is manufactured large-scale at Alma Baking and can be found at Orlando's Bakery, select ShopRites, Uncle Giuseppe's Marketplaces (their biggest retail partner) and other niche health stores. It will also soon be found at Maywood Marketplace in Maywood.
Kovacs' father and grandmother had diabetes, but his persistence in developing a bread that people can enjoy sacrifice-free goes deeper than that. The Bergen County native used to work in the field of finance, but when the stock market crashed in ’08, he entered a “very dark period” of his life.
He also worked a bit in property development and was once hired to build out a bakery in Orlando, Florida. This trip sparked a desire in Kovacs to enter the bakery business. He came back and bought Orlando’s in 2017 – meaning his focus on the low-carb bread predates him even owning a bakery.
When asked if buying Orlando’s and developing the bread pulled him out of that “dark” time, he shrugs.
“I’m from a finance background," he says. "That’s very far removed from even the real economy or society. I wanted to have that positive connection to people, and I thought this was a very forward thinking, great product.”
As he speaks, one of his workers whizzes by, the scent of a fresh loaf of bread following him, and tosses back a knowing glance.
“He really needed a change,” he says.
Kovacs smiles sheepishly at him, clearly more comfortable talking about the product than his personal life, and comments, “It’s also only two points on the Weight Watcher’s scale.”

Labels for the wines feature iconography instantly familiar to fans of the Grateful Dead, including the band’s kinetic skull and roses figure, which emerges from the trunk of a twisted, ancient vine on the Gnarly Head Limited Edition Old Vine Zinfandel label, and its emblematic lightning bolt skull, made famous by the cover of the epic 1976 live double album “Steal Your Face”, an adaptation of which appears on the Limited Edition Cabernet Sauvignon label.
