RIDGEFIELD PARK, NJ – May 16, 2023 – Samsung Electronics America, Inc., today named the three National Winners of Samsung Solve for Tomorrow, the nationwide competition for public middle and high school students that awards $2 million annually in prizes to teams demonstrating how they use STEM (science, technology, engineering, and math) skills to create positive change and address pressing issues in their local communities. The winning schools from Delaware, Florida, and Texas – selected from 10 National Finalists – each receive $100,00 in Samsung technology and school supplies, while the remaining seven Finalists receive $50,000 per school.

The three National Winners – Brandywine High School (Wilmington, DE); Strawberry Crest High School (Dover, FL); and Porter High School (Porter, TX) – were announced by Samsung Electronics America President and CEO KS Choi at today’s celebration in Washington D.C. U.S. Senator Jon Ossoff of Georgia and U.S. Senator Todd Young of Indiana also attended the event as they were honored with STEM Champion Awards from Samsung in recognition of their efforts to advance STEM pursuits in their states.

Joining Choi and the Senators to honor the winners and all competitors were speakers including Mark Lippert, Samsung Electronics North America Executive Vice President of Public Affairs, and, past Solve for Tomorrow winners, Paula Labbe, Robotics Teacher at Great Bridge High School, Virginia, and Daniella Gonzales, a student at Princeton High School, New Jersey.

The best key lime pie might just be from New Jersey

On the day of Ridgefield Park's big village festival in September, baker Gina Constanza could do one thing only: apologize to her customers.Sorry, she told them, but she was plain out of her most popular item, by far: key lime pie. On the day of Ridgefield Park's big village festival in September, baker Gina Constanza could do one thing only: apologize to her customers.

Sorry, she told them, but she was plain out of her most popular item, by far: key lime pie. Constanza, a wholesale baker who had opened her brick-and-mortar shop, Gina the Baker, on Main Street just one month earlier, had sold every one of the 36 pies she had made for that special day — two hours after opening her door.

Her wholesale clients — among them Zabar's, Fresh Direct, Jet.com and Grace's Marketplace — had fared even worse. For two weeks, they did not receive even one key lime pie delivery; on average 600 are dropped off each week.

The reason for the sudden disappearance of Constanza's creamy, sweet but tart light green pies? Hurricane Irma had caused a key lime shortage, and Constanza needed every fresh key lime she had to make her pies for the day of the festival.

"I don't use anything but fresh key limes from Florida," said Constanza, a 47-year-old mother of two girls. She doesn't use sugar either, just condensed milk for sweetness. And she throws in one "secret ingredient" — heavy cream. "I put the whipped cream inside the pie," she said.

Which may explain why her pies are so popular. "They sell out weekly," said bakery manager Braint Kirk of West Side Market on 98th Street and Broadway in New York City. "They're bestsellers."

Since opening her shop, Constanza has expanded the bakery's menu. Customers at her charming, airy, white-and-eggshell-blue bakery, which she runs with her eldest daughter, Chelsea Almanzar, 25, can not only purchase a small (5-inch) and large (9-inch) key lime pie for $4.50 and $28 respectively, but chocolate mini bundt ($4), apple turnover ($3.75),carrot cake ($4.25), Nutella doughnut ($2.50) and pignoli cookies ($.75), among other sweets.

She also offers savory items; most of them with Caribbean roots, an homage to her family's Dominican heritage. There are Cuban sandwiches ($8) and beef pastelitos ($1.50) on offer. There are even some desserts with island flavors, such as an ethereal trés leches cake (Constanza's favorite; $4) and a dense guava pastelito ($2.75). More than 20 percent of Ridgefield Park residents are Hispanic or Latino. Constanza estimates that around 50 percent of her customers are Latino.

"I love to bake," she said. "It's therapeutic. It gives me a sense of peace."

Nevertheless, she never expected to make baking her career.

She grew up in Washington Heights, where she still lives with her two daughters, her mother, and her 95-year-old grandmother, a former seamstress.

Her grandmother's sister had a catering business in the Dominican Republic and Constanza recalls spending summers with her, learning how to bake. "I really loved it. At age 16, I was baking cakes, looking at recipes, pushing my Latino flavors into them."

"I'd bake for friends and family," she continued. "I was afraid of making it my career. It was my hobby, my passion."

In the spring of 2015, she went to Key West, Florida, with a friend, who happened to own a bar and small restaurant in Manhattan, and who happened to love key lime pies. The two were in Key West for two days, but somehow managed not to sample any key lime pie.

Constanza said her friend told her to make up to him. "You will just have to make me a key lime pie," the friend said.

Constanza had never baked a key lime pie before. "I never even had one," she said. For three weeks she experimented.

"This is the most amazing pie I ever had," she said her friend told her when she offered him a slice.

He encouraged her to bake more pies, which he then would bring to his bar — and sell out of them. Not long after, Zabar's agreed to sell the pies. Soon other delis, gourmet shops, online delivery sites signed on too. "It happened so fast," she said.

She had recently been downsized from a job in the fashion industry. So she rented a commercial kitchen in Midland Park, and set out to make a go of baking. "Rents in New York City are prohibitive," she explained. When the lease ran out, she decided to move her kitchen to Ridgefield Park — and open a bakery too.

"I love coming into the store," she said. "All I think about is baking."

She said she's thinking of eventually moving her family to New Jersey — "It would be nice not having to go over the bridge" — and perhaps open another bakery in North Jersey.

That would make fans like Frank Lay of Lincoln Park happy, no doubt. "It's hard to find find key lime pie around here," he said. "I was so glad to find Gina's. Her key lime pie is super delicious. It's perfect."
